#WFD – Roasted salmon fillet with tomato sauce

Serve fish topped with sauce, accompanied by tossed salad of rocket and cherry tomatoes

POLOKWANE – Few foods pack a bigger nutritional punch than salmon.Not only is this fish rich in protein and vitamin D, but it’s also one of the top sources of omega-3 fatty acids.

That’s great news because omega-3s have been shown to reduce inflammation, regulate blood pressure, and are crucial for brain and heart health

Ingredients

  1. 1 garlic clove
  2. 600g salmon fillets
  3. tbsp lemon juice
  4. 1 x KNORR Naturally Tasty Spaghetti Bolognese Recipe Mix
  5. 400g 1 can chopped tomatoes
  6. 150g cherry tomatoes
  7. 150g fresh rocket leaves

Method

  1. Preheat oven to 200°C.
  2. Rub salmon fillets with melted margarine mixed with lemon juice and garlic.
  3. Season with freshly ground black pepper.
  4. Roast for 8-10 min.
  5. Meanwhile mix the contents of the sachet of Knorr Naturally Tasty Spaghetti Bolognese Recipe Mix with tomatoes and place into a pot.
  6. Bring to a boil, reduce the heat and simmer for 10 min.
  7. Serve fish topped with sauce, accompanied by tossed salad of rocket and cherry tomatoes with 1 tbsp. olive oil.
