#WFD – Chicken, Broccoli and Rice Stew

This recipe takes around 10 minutes to prepare and 40 minutes to cook.

POLOKWANE – This recipe by What’s for Dinner is so delicious, it will have everyone eating their vegetables and asking for more.

Ingredients

  1. 10ml olive oil
  2. 1 onion, halved and roughly chopped
  3. 1 clove garlic, crushed
  4. 6 chicken thighs
  5. 5ml Robertsons Paprika
  6. 2.5ml Robertsons Turmeric
  7. 180ml long grain white rice
  8. 400g can tomato, diced
  9. 250ml water
  10. 15ml dijon mustard
  11. 30ml honey
  12. 1 x KNORR Chicken Stock Pot
  13. 200g broccoli, steamed
  14. 60ml roughly parsley, chopped
  15. salt and pepper (to taste)

Method

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion and garlic and cook until onion softens.
  3. Add the chicken and cook until evenly golden brown.
  4. Add the paprika, turmeric, rice, tomatoes, water, mustard, honey and KNORR Chicken Stock Pot.
  5. Bring to the boil and reduce to a simmer, cooking for 20 minutes or until chicken and rice are tender.
  6. Broccoli and parsley, and cook until heated through.
  7. Serve and enjoy!
