POLOKWANE – Mother’s Day is a special day for mothers, especially having the nearest and dearest close by.

For Mother’s Day this year, I was accompanied in the kitchen by my mother and daughter to make some delicious omelettes.

Ingredients:

• Three eggs.
• Butter or oil.
• Robot peppers (red, yellow and green).
• Half an onion.
• Half a tomato.
• Salt to taste (preferably Himalayan salt).
• Chives for topping.
• Vienna sausages or bacon (or both).
• Cheese.
• One avocado.
