Cook up an easy Easter feast
Although a religious holiday, a family meal is a traditional part of Easter celebrations in many Christian homes.
EASTER is a Christian holiday and festival celebrating the resurrection of Jesus Christ after His crucifixion at Calvary. The festival is also known as Easter Day, Easter Sunday, Resurrection Day and Resurrection Sunday.
The Festival has two facets to its celebration: the religious part and the feasting part. Both ideas represent a new beginning; a time to get it right and love our families. Spending time and serving those we love is the spirit of Easter, for God is love.
Celebrate Easter this year with a traditional Easter dinner of roast lamb, created by Blue Strawberry Caterers.
Easter Roast Leg Of Lamb
To roast:
Preheat your oven to 190 degrees, roast the lamb and potatoes for 30 min, then add the vegetables and roast for a further 30-40 min. Once done, remove the lamb from the roasting dish and set aside to rest for at least 5-10 minutes before carving, (on a cold day place some foil over it to keep it hot). Mix the veg and potatoes in the roasting pan, coating them with all the juices, then carve, serve and enjoy!
For the vegetables:
Halve the baby potatoes and chop up the vegetables. Vegetables that take longer to cook should be chopped smaller than the quicker roasting veg, the more rustic the better. Melt the butter, season well and rub over the baby potatoes and vegetables, place only the potatoes in the roasting dish with the lamb. Keep the vegetables to add later.
