Friday Fruit Day – Pineapple party
Pineapple are the best diverse, delicious and golden goodness that nature has to offer

THERE is no party with at least one pineapple in the mix. This zesty fruit is so versatile it can be recreated into anything delicious and fun.

Either a drink or a dessert, you can never go wrong with the pineapple.
Pineapple cups and pina colada:

Cut off the pineapple tops.
With a pineapple corer, remove the top 3/4 of the inside of the pineapple. Be careful not to pierce through the bottom of the pineapple, or your drinks will leak. Take out the tall remaining core with a knife. Cut the removed pineapple slices into large chunks. Set aside. In a blender, mix together the alcohol, coconut cream, pineapple chunks, juice, coconut milk and ice. Blend until slushy. Divide drinks between the two pineapple cups cups. Topping with a decorative umbrella is highly encouraged.
Pineapple Ice lolly:

One small pineapple (or ½ medium), skin removed and chopped into chunks, one banana, 250mls of coconut milk drink (such as Kara) – more if it is looking too thick
Blend the pineapple, banana and a little coconut milk together. You’ll need to do this fairly thoroughly if you don’t want pineapple chunks in your lollies. Add the remaining milk, blend again, and pour into your moulds.
