Cheesy cottage pie

Vegetables in a cheesy disguise.

With the rush of heading back to work many people don’t know what to cook for dinner.

Here is a quick and easy back to work meal that will hit the spot.

You will need:

  • 15ml of olive oil
  • 1 large onion, finely chopped
  • 1 can of chopped tomato
  • 1kg of mixed vegetables
  • sugar, salt and freshly ground black pepper
  • 2 packets of instant creamy-garlic sauce powder
  • 400ml of water
  • 250ml of cheddar cheese, coarsely grated or cut into small cubes
  • 6 x 250ml of prepared and seasoned mashed potatoes
  • 45 ml butter, melted
  • 30ml of parsley, finely chopped

You will then:

Heat the oil in a saucepan and add the onion.

Sauté until translucent.

Add the tomatoes and frozen vegetables.

Season and bring to a boil.

Cook rapidly without a lid, stirring often, until the liquids have reduced significantly.

Whisk the sauce powder into the water and add to the vegetables.

Stir until thickened.

Remove from heat, stir in the cheese and pour mixture into a greased baking dish.

Spoon the mashed potatoes on top and spread evenly over the vegetables.

Mix together the melted butter and parsley and drizzle over the top.

Bake for 10 minutes in the oven, preheated to 190ºC, before serving.
