Karyn shares her love language: Swiss rolls

Celebrating a birthday during the lockdown? This is the perfect recipe for you!

TO celebrate Rhett’s birthday recently, I made platters for his 65 staff members and then also made eight of my easy-to-make Swiss rolls.

Ingredients:

4 eggs

3/4 cup sugar

1/4 cup cocoa

1 tsp baking powder

3/4 cup flour

Method:

Beat 4 eggs and 3\4 cup sugar until white and fluffy.

Add 3/4 cup flour, 1/4 cup cocoa and 1 tsp baking powder, sifted.

Fold into egg mix (don’t over beat)Line a baking tray with wax paper and spray and cook.

Bake for 11 mins on 180°c.

Once the cake is out of the oven, cool slightly. While still slightly warm, take a damp dish cloth and roll your Swiss roll in the damp cloth to avoid cracks.Leave it for five minutes in the cloth until cool.

Spread your desired mixture over your cake sheet and roll again. I used caramel and fresh cream. You can top it off with a ganache or just dust it with icing sugar.
