[WIN] Stone fruit: just in time for Christmas

Canned stone fruits make great stocking fillers.

Popular stone fruits form part of a flavourful fruit combo available at Food Lovers Market this week.

Peaches, which are rich in flavour, freshness and nutritional value, remain a summer favourite.

With the festive season approaching, a rich peach syrup make a fitting glaze for chicken or pork – and is versatile enough to be enjoyed with ice cream.

Ryan da Silva, store manager at Food Lovers Market Krugersdorp, suggests that you can your peaches, and then use them for desserts and cooking when the fruit is not in season. Alternatively, homemade canned peaches make a delicious stocking filler this Christmas.

• Rinse peaches and place them in boiling water for 30 seconds. Remove, and dip into iced water – this helps to loosen the skins.

• Remove the skins, cut the peaches in half and remove the pits, making sure to scrape away the red fibres around the pit as this may cause the fruit to darken during the canning process.

• Drain the peaches and pack them into hot, sterilised jars, leaving 1,5cm head-space.

• Mix one and a half cups of sugar with four cups of water in a large saucepan and bring to boil until sugar has dissolved and a syrup is formed.

• Pour in the hot syrup into the jars, to within 1,5 cm from the rim of the jar, remove any air bubbles with a non-metallic spatula and add extra syrup if jar allows.

Seal and wipe the jar and its rims. Place jars on a rack in a deep stock pot of hot water. Cover and bring to boil. Remove jars from hot water with tongs and place on a dish towel – do not touch the jars directly. Cool for several hours or overnight. Test seals before storing.
