Ryan da Silva, store manager at Food Lover’s Market Krugersdorp shares his favourite chicken and peach platter – a fresh, light and tasty summer meal.

Ingredients:

1 head of lettuce, cut crosswise into strips

1 chicken, prepared rotisserie style, meat sliced thickly

2 peaches, peeled if desired, roughly chopped

3/4 cup blue cheese, crumbled

1/2 cup almonds, roughly chopped

1/4 cup white wine vinegar or cider vinegar

1/4 cup extra-virgin olive oil

1 teaspoon salt

1/4 teaspoon black pepper

Method:

Arrange the lettuce, roasted chicken, peaches, blue cheese and almonds on a platter. Mix the vinegar, olive oil, salt and pepper in another bowl. Drizzle the vinaigrette over the salad, season with pepper and serve.
