Recipe: Castle Milk Stout chocolate mousse soaked berries and praline

Castle Milk Stout is a rich, dark and creamy beer, designed for savouring and an especially good partner to food.


Ingredients

200ml Castle Milk Stout
300g dark chocolate
30g unsalted butter
2 eggs lightly beaten
6 tbsp castor sugar
500ml whipped cream
1 punnet blueberries for garnish

Method

1. Place chocolate in a heatproof bowl over a saucepan with boiling water.

2. Stir chocolate until melted.

3. Add butter and stir in until melted, set aside to cool down for a few minutes, add beaten eggs and 100ml Castle Milk Stout and stir.

4. Fold whipped cream into the chocolate mousse until smooth.

5. Pour into glasses, cover with cling wrap and refrigerate for 4 hours.

6. Soak the blueberries in 100ml Castle Milk Stout.

7. Melt the castor sugar and pour swirls onto a baking sheet, leave to cool down.

8. Remove chocolate mousse from the fridge, decorate with the stout-soaked berries and praline shard.
