Recipe: Cheesy egg muffins

The ultimate budget buster that can be made with leftovers, frozen vegetables or canned meat.


This diverse pie can be anything you want it to be. Baked in a bread loaf, it’s easy to cut and store in the fridge. It’s also low carb.

Ingredients

6 eggs
350ml milk
200g cheese of your choice
Salt and pepper to taste

Additionally you can add 500g of any leftovers, canned veg or meat. Just make sure to use ingredients that aren’t too watery.

Method

1. Whisk the eggs and milk together until frothy.

2. Add the salt, pepper, cheese and any other ingredients you want.

3. Place the mixture in a greased bread loaf tin or a muffin pan.

4. Bake for 25 minutes until puffed up and golden.
