Recipe of the day: Creamy seafood pasta

When you are not sure of what to make for dinner for yourself and your family, pasta is always a good idea.

With many variations, ingredients and substitutions, you can create a long list of family pasta favourites.

This creamy seafood pasta is the perfect dish to be enjoyed on any day of the week. Remember to double the ingredients to ensure you have some left over to enjoy for lunch the next day.

Recipe of the day: Creamy seafood pasta

Ingredients

  • 1 packet of linguini, uncooked can substitute for spaghetti or fettuccine
  • 1 tablespoon of cornstarch
  • 1 cup of heavy cream
  • 1/2 cup of milk
  • 1/2 medium onion, finely chopped
  • 2 teaspoon of minced garlic
  • 2 teaspoon of olive oil
  • 250 g of uncooked large shrimp peeled and deveined
  • 250 g of bay scallops
  • 3 tablespoon of chicken broth
  • 1/2 cup of parmesan cheese, freshly grated divided
  • 1 tablespoon of fresh parsley, chopped
  • 1 teaspoon of dried basil
  • salt and pepper, to taste
  • 1/2 cup of sun dried tomatoes, drained and chopped may add more to taste
  • 2 handfuls baby spinach

Instructions

  1. Cook linguine or fettuccine according to package directions.
  2. Meanwhile, in a small bowl, combine cornstarch and milk until smooth; set aside.
  3. In a large skillet, saute onion and garlic in oil until onion becomes translucent.
  4. Add the shrimp, scallops and chicken broth. Cook, uncovered, for 3-5 minutes or until shrimp turns pink.
  5. Pour milk mixture into the skillet. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened.
  6. Stir in Parmesan cheese, parsley, basil, salt and pepper, and sun dried tomatoes and simmer for 2 minutes.
  7. Lastly add baby spinach and mix until leaves wilt.
  8. Drain linguine; top with seafood mixture. Sprinkle with remaining Parmesan cheese.
