Wishing you an (avo) green Christmas

If all you want for Christmas is to have a delicious meal and impress your guests and family, here’s a recipe that’s sure to wow.

For Christmas lunch, this avo wreath salad’s a show stopper.  It takes just 10 minutes to make, serves six to eight people, and looks as good as it tastes.

Avocado Christmas wreath salad

You’ll need: 4 – 6 ripe avocados (depending on size); 1 small punnet strawberries or raspberries; half a red onion, finely sliced; 100 g baby spinach or rocket leaves; half a beetroot, scrubbed and grated; 1 wheel of feta; juice of 1 lemon; avocado oil or olive oil to drizzle; balsamic vinegar; sea salt and freshly ground black pepper; pomegranate rubies to garnish

To make: Peel and de-pip the avocados, slice and squeeze over lemon juice.

Arrange the salad ingredients on a platter in a wreath shape on a flat plate.

Garnish with pomegranate rubies, and drizzle with balsamic vinegar and oil. Serve immediately.
