Crisp green salad with asparagus and salmon

This vibrant dish brings together the crisp textures of green vegetables with the rich, omega-3-packed goodness of salmon.

Whether you’re a seasoned salad aficionado or just looking for a refreshing new recipe to add to your repertoire, this salad is easy to make and packs a nutritional punch.
Asparagus is famed for its low-calorie profile, high fibre content, and an array of vitamins, including A, C, and K. It is also rich in folate, essential for a healthy diet. Salmon, on the other hand, is a well-known source of omega-3 fatty acids, crucial for heart health, cognitive function, and inflammation reduction. Recipe compliments of Safari Vinegar.

 

Ingredients

  • 120 g baby spinach leaves
  • 125 g young asparagus
  • 200 g smoked salmon ribbons
  • 60 ml capers
  • 2 avocados, sliced
  • A few slices red onion(optional)
  • 60 – 80 ml SAFARI French Dip and Drizzle Vinaigrette
  • Salt and freshly ground black pepper to taste

Method

  1. Arrange the spinach on a serving plate.
  2. Arrange the asparagus, salmon, capers and avocado on top.
  3. Sprinkle onion slices over and drizzle liberally with vinaigrette.
  4. Season to taste and serve with French loaf.
