Low-calorie and lactose-free mango protein pudding

This mango protein pudding is made with lactose-free cottage cheese and low-fat yoghurt making it a healthy breakfast option.

If you’ve ever craved something sweet but didn’t want to derail your health goals, you’re not alone. Traditional puddings are usually packed with sugar, heavy cream, and dairy, making them a no-go for anyone watching their calorie intake or dealing with lactose intolerance. But this mango protein pudding flips the script. It’s low in calories, lactose-free, high in protein and naturally sweetened thanks to ripe mangoes. Recipe compliments of Lancewood.

Ingredients

  • 15 ml gelatine
  • 45 ml water
  • 250 g lactose-free low fat plain smooth cottage cheese
  • 200 ml low-fat plain yoghurt
  • 150 g fresh mango
  • 5 ml vanilla essence
  • 50 ml sugar or 5 sweetener sticks
  • mango slices to garnish

Method

  1. In a small bowl, add the water and sprinkle over the gelatine. Leave to stand for 5 minutes.
  2. Microwave for 10 seconds, then stir and microwave for another 5 seconds, taking care not to boil it. Set aside to cool to room temperature.
  3. Add the cottage cheese, yoghurt, mango, vanilla, sweetener and cooled gelatine to a blender and blend until smooth.
  4. Pour into 2 bowls and refrigerate for 1 hour or until set.
  5. Garnish with fresh mango.
