Crisp apple and mint spritz gin cocktail

For a lighter version, swap half of the apple juice for soda water, or for extra sweetness, add a splash of elderflower cordial.

This apple and mint spritz is a crisp summer cocktail where smooth gin, tart green apples, and a squeeze of lime come together with sparkling soda.

Ingredients

  • 2 medium green apples (plus a few extra slices for garnish)
  • 4 fresh mint sprigs
  • Juice of 1 lemon
  • 2 tablespoons honey or sugar syrup (to taste)
  • 200ml gin
  • 400ml chilled sparkling apple juice or apple cider
  • Ice cubes
  • A few mint leaves for garnish

Method

  1. Peel and slice two green apples. Add them to a jug with the lemon juice and honey (or syrup). Muddle gently with a spoon or muddler to release the juice and aroma.
  2. Pour in the gin and stir well. Let it sit for five minutes so the flavours can blend.
  3. Fill four tall glasses with ice. Strain the apple mixture into the glasses until each is half full.
  4. Add sparkling apple juice or cider to each glass. Give it a gentle stir to mix.
  5. Garnish with thin slices of apple and a few mint leaves. Serve immediately while chilled and bubbly.
