Greek delight chia seed pudding with fresh raspberries

Use either black or white chia seeds, as both offer the same nutritional benefits and create a thick, gel-like texture once soaked overnight.

Chia seeds may be tiny, but they pack in fibre, plant-based omega-3 fats, and protein, which help support digestion and keep you feeling satisfied. When soaked, they swell and create that thick, spoonable texture without any effort. Paired with Greek double cream plain yoghurt, you get calcium and protein with a rich, tangy flavour that feels indulgent without being heavy. Recipe compliments of Lancewood.

Prep: 10 minutes, plus chilling time | Serves: 4

Ingredients

  • 1 cup fresh raspberries
  • 1 cup milk
  • ½ cup chia seeds
  • 1 cup Greek double cream plain yoghurt
  • 2 tablespoons honey

To serve

  • ½ cup fresh raspberries
  • ½ cup coconut flakes

Method

  1. Place the raspberries in a bowl and mash until juicy. Stir in the yoghurt until well combined.
  2. Add the chia seeds, milk and honey. Mix well until everything is evenly combined.
  3. Let the mixture stand for 3 minutes, then stir again to break up any clumps.
  4. Spoon into individual glasses or bowls.
  5. Refrigerate for at least 2 hours, or until thick and set.
  6. Just before serving, top with extra raspberries, a drizzle of honey and a sprinkle of coconut flakes.
