Treat the kids to pear and berry frozen yoghurt bars
Pears don't always get the spotlight in frozen desserts, but they bring natural sweetness and a soft texture that works beautifully chilled.
Kids don’t care whether it’s cold outside. If there is something frozen in the freezer, they are interested. These pear and berry frozen yoghurt bars layer jammy fruit with creamy yoghurt and a golden oat crumble, creating a balanced freezer treat with both crunch and freshness in every bite. Ingredients
- 5 ml butter
- 2 pears, about 280 g, peeled and diced
- 150 g frozen mixed berries
- 10 ml honey
- 5 ml fresh lemon juice
- 5 ml vanilla paste
- 30 g rolled oats
- 25 g cake flour
- 30 g brown sugar
- 15 g coconut
- 2.5 ml ground cinnamon
- 40 g butter, melted
- 375 ml full cream plain yoghurt
Method
- Melt 5 ml butter in a saucepan over medium heat. Add the pears and cook, stirring regularly, for 2 minutes.
- Add the frozen berries and cook for another 2 minutes. Stir in the honey and lemon juice. Continue cooking for about 5 minutes, or until the fruit is tender and the liquid has reduced. Remove from the heat and stir in the vanilla paste. Set aside to cool completely.
- Preheat the oven to 160ºC and line a small baking tray.
- In a bowl, combine the oats, flour, brown sugar, coconut and cinnamon. Pour in the 40 g melted butter and mix well.
- Spread the mixture onto the lined tray and bake for 15 minutes, or until golden. Allow to cool fully, then break into crumbs.
- Line a 20 cm square baking tin with baking paper.
- Stir the cooled fruit mixture into 1 cup of the plain yoghurt. Spoon into the prepared tin and spread into an even layer.
- Dot the remaining yoghurt over the top and swirl gently with a knife.
- Sprinkle the crumble over and press down lightly. Freeze overnight until firm.
- Lift out, slice into bars and store in the freezer until ready to serve.
