Jammy cherry swirl with whipped yoghurt cream
This cherry fool folds thick cherry compote through whipped cream and Greek yoghurt for an easy, tangy, sweet dessert.
When you want something sweet after dinner but cannot face baking on a weekend, this dessert is the answer. Fool-style desserts come from British home cooking, where fruit was gently cooked until juicy, then folded through custard or cream. This version keeps that same idea but feels a little fresher. You simmer cherries into a quick compote, let it cool, then ripple it through a thick mix of whipped cream and Greek yoghurt. Recipe compliments of Juicy Delicious.

Ingredients
• 3 cups cherries, pitted
• ⅓ cup caster sugar
• 1 tsp cornflour
• Pinch of salt
• 2 tsp lemon juice
• 1¼ cups heavy cream
• 200 ml Greek yoghurt
• 1 tsp vanilla extract
• Fresh cherries, to garnish
Method
- Add the cherries, sugar, cornflour, salt, and lemon juice to a saucepan.
- Cook over low heat, stirring, until the sugar dissolves and the juices release and thicken slightly.
- Spoon the cherries into a bowl and cool completely, then chill in the fridge.
- Whip the cream in a large bowl until soft peaks form.
- Add the Greek yoghurt and vanilla and beat until creamy, thick, and at medium peaks.
- Gently fold the chilled cherries through the cream mixture so it stays rippled, not fully mixed.
- Spoon into dessert glasses and chill until ready to serve.
- Garnish with fresh cherries and serve.
