Boozy, jewel-coloured tropical fruit cup
Celebrate the start of the weekend with a gorgeous layered fruit cup cocktail with fresh seasonal fruit, Aperol, and sparkling wine.
Friday is here, and this cocktail is exactly the drink you want in your hand to celebrate it. The Tropical Fruit Cup is built in the glass, which means no complicated shaking or straining is required. The base is a generous pour of Aperol – an Italian aperitif famous for its orange colour and bittersweet citrus taste. It has been around since 1919, and it brings a slightly bitter edge that keeps a fruity cocktail from becoming too sweet. A hint of vanilla adds subtle sweetness, creating a smooth, velvety texture. Next, vodka is added, followed by a splash of peach schnapps and fresh fruit, and finally, chilled sparkling wine is floated over the top.
Ingredients
- 30ml Aperol
- 30ml vodka
- 20ml peach schnapps
- A small handful of mixed fresh fruit, diced (mango, kiwi, peach or orange)
- 90ml chilled sparkling wine or Prosecco
- Ice, to serve
- A slice of orange or mango, to garnish
Method
- Add the diced fresh fruit to the base of your coupe or wide cocktail glass.
- Fill the glass about halfway with ice.
- Pour over the Aperol, vodka and peach schnapps.
- Stir gently to combine the spirits with the fruit.
- Slowly pour the chilled sparkling wine over the back of a spoon to float it on top and preserve the fizz.
- Garnish with a slice of orange or mango and serve immediately.
