Brie, cherry and herb omelette recipe for two

This creamy omelette made with brie and fresh cherries takes just a few minutes to prep and needs only a handful of ingredients.

When it comes to breakfast or a light lunch, most of us think of a classic cheese omelette with fruit on the side. But what if the fruit was part of the omelette? Brie is one of France’s most beloved soft cheeses, prized for its velvety, creamy centre and its distinctive, bloomy white rind. Made from cow’s milk and aged for just a few weeks, it has a rich, buttery flavour. Brie pairs well with sweet, acidic fruits like peaches, apricots and cherries. In this recipe, compliments of Juicy Delicious, fresh cherries are folded into soft eggs with melted brie and a sprinkle of chopped chives or parsley.

Prep: 10 minutes | Cook: 5 minutes | Serves: 2

Ingredients

  • 4 eggs
  • 2 Tbsp cream or milk
  • 1 Tbsp butter
  • ½ cup fresh cherries, halved and pitted
  • 80g brie, sliced
  • 1 Tbsp chopped chives or parsley
  • Salt & black pepper

Method

  1. Beat eggs with cream, salt, and ground black pepper.
  2. Melt the butter in a pan, pour in eggs.
  3. When nearly set, scatter over the cherries, brie, and herbs.
  4. Fold gently, cook 1–2 minutes until brie melts.
