Lemon, honey and lavender Gin Rickey

This bright citrus cocktail pairs particularly well with grilled fish, chicken skewers, goat's cheese salads and seafood platters.

The Gin Rickey has been around for well over a century, which is impressive for a drink that contains so few ingredients. It first appeared in Washington D.C. in the late 1800s and quickly became popular because it was crisp, refreshing and uncomplicated, with no fancy syrups or elaborate techniques. This version takes the original in a softer direction. Fresh lemon replaces the traditional lime, giving the drink a slightly gentler citrus flavour, while lavender adds a subtle floral note that feels right at home in spring.

Ingredients

  • 90 ml gin
  • 120 ml freshly squeezed lemon juice
  • 30 ml honey
  • 120 ml soda water
  • 2 fresh lavender sprigs
  • 2 lemon wedges
  • Ice cubes

Method

  1. Fill a cocktail shaker with ice.
  2. Add the gin, lemon juice and honey.
  3. Shake well until chilled.
  4. Strain into two ice-filled highball glasses.
  5. Top with soda water.
  6. Garnish with lavender sprigs and lemon wedges.
