How to craft the perfect Dragon Fruit cocktail

With its stunning appearance and subtle, mildly sweet flavour, dragon fruit adds a unique twist to classic cocktails.

Dragon fruit, also known as pitaya, is a cactus species that has become a trendy ingredient in recent years, not only for its striking looks but also for its subtle sweetness and delicate texture (somewhat reminiscent of kiwi and pear).

The vibrant pink skin and speckled white or magenta flesh make it one of the most visually appealing fruits, perfect for adding flair to cocktails.

Ingredients

  • 50ml white rum or vodka
  • 100g dragon fruit (fresh or frozen)
  • 25ml freshly squeezed lime juice
  • 15ml simple syrup (or to taste)
  • 50ml sparkling water
  • Ice cubes
  • Dragon fruit slice and lime wedge for garnish
  • Optional: 1-2 fresh mint leaves

Method

  1. If you’re using fresh dragon fruit, cut it in half and scoop out the flesh. If using frozen dragon fruit, ensure it’s slightly thawed. Place the dragon fruit in a blender or food processor and blend until smooth.
  2. In a cocktail shaker, combine the rum (or vodka), lime juice, dragon fruit purée, simple syrup, and a handful of ice cubes. Shake vigorously for about 15-20 seconds.
  3. Double-strain the mixture into a glass filled with ice to remove any seeds or pulp. Top it off with a splash of sparkling water for some fizz.
  4. Garnish with a slice of dragon fruit on the rim and a lime wedge.
