Enjoy a freshly made batch of rooibos glazed doughnuts

These light, fluffy doughnuts are easier to make than you'd think but be prepared to wait about an hour for the dough to rise.

Infused with rooibos tea, these yummy tea time treats blend the comforting taste of traditional doughnuts with the subtle, earthy notes of rooibos. The addition of Rooibos goes beyond just enhancing the flavour – it also boosts the nutritional profile of the doughnuts. Rooibos is rich in antioxidants believed to aid in reducing inflammation and promoting a stronger immune system. Recipe compliments of Joekels.

Ingredients

  • ¼ cup Laager Pure Rooibos tea
  • ¾ cup milk
  • 1 pkt instant yeast
  • 1 egg
  • 3 Tbls unsalted butter, softened/p>
  • ¼ cup castor sugar
  • ½ tsp salt
  • 3 ½ to 3 ¾ cups flour
  • Oil for frying

Method

  1. Heat milk in the microwave for 45 seconds until warm. Add the yeast and stir gently. Let it sit for 5-10 minutes until foamy.
  2. In a mixer, beat the yeast mix, cold tea, eggs, butter, sugar and salt until combined.
  3. Switch to the dough hook and gradually add in the flour until a soft ball forms.
  4. Knead for 4 minutes. Place in a clean, oiled bowl and cover. Allow the dough to double in size (about 1 hour).
  5. On a floured surface, roll the dough out to ½ inches thick. Using a doughnut cutter, cut the dough into shapes.
  6. Place the doughnut on a lined baking tray. Cover with a clean kitchen towel and leave to rise for another hour.
  7. Heat oil to 175-180°C in a deep pot. Fry doughnuts for 1-2 minutes each side or until golden brown. Remove carefully and drain on a paper towel.
  8. To serve, dip doughnuts in the glaze and set them on a rack.
