Toast to summer with an iconic Italian cocktail

The peach melba Sgroppino offers a fun, fruity take on the traditional recipe while keeping that creamy, bubbly charm.

The Sgroppino is an iconic Italian cocktail, traditionally made with lemon sorbet, Prosecco, and a touch of vodka, often enjoyed as a light and refreshing palate cleanser after a meal. But when you add the flavours of a classic peach melba dessert you get a deliciously fruity twist that’s perfect for summer sipping or adding a bit of sparkle to any occasion.

 

Ingredients

  • 1 scoop peach sorbet
  • 50ml Prosecco (or any sparkling wine)
  • 15ml vodka
  • 6 – 8 fresh raspberries
  • Fresh peach slice and mint sprig for garnish

Method

  1. Gently muddle the raspberries in a glass or cocktail shaker to release their juices. You can strain the mixture if you prefer a smoother drink, but leaving some raspberry pieces adds texture and flavour.
  2. In a mixing bowl or cocktail shaker, add the peach sorbet, Prosecco, and vodka. Stir or whisk gently until the sorbet melts slightly.
  3. Add the muddled raspberries to the sorbet mixture, then pour the cocktail into a chilled glass.
  4. Top with a fresh peach slice, extra raspberries, and a sprig of mint.

Top tip: The peach melba Sgroppino pairs wonderfully with light appetisers, fruit platters, or even desserts like a fruit tart.
