Enjoy a taste of the tropics with mango and passion fruit milkshake

While rum or vodka complements this milkshake well, feel free to experiment with other spirits like coconut-flavoured tequila.

If you’re craving a taste of paradise, look no further than this tropical ‘milkshake’. Bursting with mango, tangy passion fruit, and creamy banana, this adults-only shake has just the right amount of kick and is perfect for warm , summer afternoons.

Ingredients

  • 1 ripe mango, peeled and chopped
  • 1 banana, peeled and sliced
  • 2 passion fruits (plus 1 for topping)
  • 1 cup of vanilla ice cream or coconut milk ice cream for a dairy-free option
  • 1/2 cup of coconut milk (adjust for thickness)
  • 30-60 mls of rum or vodka (optional, adjust to taste)
  • Ice cubes (optional, for a thicker texture)
  • Whipped cream (optional, for garnish)

Method

  1. Peel and chop the mango into small pieces. Slice the banana, and scoop out the seeds from two passion fruits into a small bowl.
  2. In a blender, combine the fruits with vanilla ice-cream and coconut milk. If you prefer a thicker milkshake, add a handful of ice cubes. Pour in the rum or vodka. Blend everything until smooth and creamy, adjusting the consistency with more coconut milk if needed.
  3. Pour the milkshake into a tall glass. Top with a dollop of whipped cream and the remaining passionfruit.

Top tip: This milkshake is best enjoyed fresh, as the fruits may begin to oxidise, changing both the flavour and colour if left to sit for too long.
