Chicken stir-fry loaded with mixed veggies

Stir-fry is like a blank canvas for all your favourite veggies, coming together in one dish that’s as easy to make as it is delicious.

We can’t get enough of a veggie-packed stir-fry. Diced carrots, diced cauliflower stems, diced potatoes, sweetcorn kernels, and whole green peas – pile them all in! Recipe compliments of Harvestime.

 

Prep Time: 5 minutes | Cooking time: 40 – 50 minutes | Serves: 4 – 5

 

Ingredients

  • 2 cups Harvestime All-in-One Mix
  • 500 grams of chicken fillets cubed
  • 1 teaspoon garlic powder
  • 1 medium onion cut into thick slices
  • 2 cloves garlic crushed
  • ½ cup stir-fry sauce
  • ¼ cup water
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Method

  1. Season the chicken with salt, pepper and garlic powder.
  2. Heat oil in a large skillet on medium to high heat.
  3. Fry the cubed chicken in batches, remove and set aside.
  4. In the same skillet, add the onions and fry for 3 – 4 minutes before adding crushed garlic.
  5. Sauté for a minute then add the frozen veg.
  6. Cook for 8 – 10 minutes until cooked.
  7. Add the stir fry sauce, soy sauce and water and stir well.
  8. Toss in the cubed cooked chicken and stir until combined.
  9. Sauté for a further 2 minutes, then remove from heat.
  10. Season, garnish and serve with fluffy rice or noodles.
