Chicken stir-fry loaded with mixed veggies
Stir-fry is like a blank canvas for all your favourite veggies, coming together in one dish that’s as easy to make as it is delicious.
We can’t get enough of a veggie-packed stir-fry. Diced carrots, diced cauliflower stems, diced potatoes, sweetcorn kernels, and whole green peas – pile them all in! Recipe compliments of Harvestime.
Prep Time: 5 minutes | Cooking time: 40 – 50 minutes | Serves: 4 – 5
Ingredients
- 2 cups Harvestime All-in-One Mix
- 500 grams of chicken fillets cubed
- 1 teaspoon garlic powder
- 1 medium onion cut into thick slices
- 2 cloves garlic crushed
- ½ cup stir-fry sauce
- ¼ cup water
- 2 tablespoons soy sauce
- Salt and pepper to taste
Method
- Season the chicken with salt, pepper and garlic powder.
- Heat oil in a large skillet on medium to high heat.
- Fry the cubed chicken in batches, remove and set aside.
- In the same skillet, add the onions and fry for 3 – 4 minutes before adding crushed garlic.
- Sauté for a minute then add the frozen veg.
- Cook for 8 – 10 minutes until cooked.
- Add the stir fry sauce, soy sauce and water and stir well.
- Toss in the cubed cooked chicken and stir until combined.
- Sauté for a further 2 minutes, then remove from heat.
- Season, garnish and serve with fluffy rice or noodles.
