Roasted Tenderstem broccoli, potato and red pepper salad

When summer calls for something light yet satisfying, this roasted Tenderstem broccoli, potato, and red pepper salad is the perfect answer.

Tossed in a zesty Asian-inspired dressing, this crisp salad is the perfect light meal for summer. It combines the crunch of Tenderstem broccoli, the softness of roasted potatoes, and the sweetness of red peppers. Recipe compliments of Chilli Chocolate Chefs, Faatima and Zainub Paruk.

Ingredients

Dressing:

  • ¼ cup spring onion, finely chopped
  • ¼ cup fresh coriander, chopped
  • 1 Tbsp garlic, crushed
  • 1 tsp ginger garlic paste
  • 3 Tbsp peanuts, finely chopped (chopped fine)
  • 1 Tbsp roasted sesame seeds
  • 2 Tbsp sugar
  • 4 Tbsp soya sauce
  • ¼ cup rice vinegar
  • 2 Tbsp chilli oil
  • 1 Tbsp sesame oil

Salad: 

  • 500g baby potatoes, boiled
  • 300g Tenderstem broccoli
  • 2 red peppers, whole
  • ½ red onion, finely sliced
  • ½ cucumber, deseeded and cut into rings
  • ¼ cup sundried tomatoes, sliced
  • ¼ cup gherkins, chopped
  • 2 Tbsp fresh parsley, finely chopped
  • 2 Tbsp olives
  • 1 tsp tahini
  • 1 Tbsp sesame oil
  • 1 Tbsp. lemon juice
  • 50g mayonnaise
  • 50g rocket

Assembly:

  • Feta
  • Sesame seeds
  • Micro herbs
  • Peanuts

 

Method

Dressing:

  1. Mix all dressing ingredients together.

Salad:

  1. Place the boiled baby potatoes, Tenderstem Broccoli and red pepper on a baking tray, lined with greaseproof paper.
  2. Drizzle over the dressing and bake for 15 minutes.
  3. Toss together the balance of ingredients in a separate bowl.
  4. Add in the roasted veggies and a drizzle of the dressing.
  5. Toss and garnish with feta, sesame seeds and micro herbs.
