Grilled pizza on the braai with mixed vegetables

One of the joys of braaied pizza is its customisability - top it with feta, thin slices of prosciutto, or a handful of fresh basil leaves.

Grilling pizza on the braai brings a smoky, crisp charm that oven-baked pizza can’t quite replicate. It’s a fun, interactive way to enjoy pizza outdoors, and with Harvestime All-in-one-Pot Mixed Vegetables, you get a convenient boost of flavour and nutrition that makes this dish stand out. Combining the veggies with your favourite pizza toppings over a crisped, slightly charred crust turns an ordinary pizza into a summer delight.

Ingredients

For the Pizza Dough:

  • 300g all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp active dry yeast
  • 200ml warm water
  • 2 tablespoons olive oil

Method

Prepare the pizza dough:

  1. In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5 – 10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt.
  3. Pour the yeast mixture and olive oil into the flour mixture and stir until it comes together to form a dough.
  4. Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Form it into a ball and place it in a greased bowl. Cover with a kitchen towel and let it rise for about 1 hour, or until it has doubled in size.

Prepare the braai:

  1. Preheat your braai grill to medium-high heat. Ensure the grates are clean and well-oiled to prevent sticking.

Prepare the pizza toppings:

  1. While the dough is rising, you can prepare the toppings. Heat oil in the wok and stir fry on a high heat Harvestime All-in-one-Pot Mixed Vegetables for 2 – 3 minutes and set them aside.
  2. Once the dough has doubled in size, punch it down and divide it into portions for individual pizzas or one large pizza.
  3. Roll out each portion into a thin round crust. If making individual pizzas, aim for about 20cm – 20cm in diameter.

 Grill the pizza crust:

  1. Place the pizza dough directly on the grill grates or pizza tray.
  2. Grill for 2 – 3 minutes on one side until it starts to puff up and develop grill marks.
  3. Flip the crust and grill for an additional 1 – 2 minutes. Remove from the grill.

 Assemble the pizza:

  1. Brush the grilled side of the pizza crust with olive oil.
  2. Spread pizza sauce over the grilled side, leaving a small border around the edge for the crust.
  3. Sprinkle mozzarella cheese over the sauce.
  4. Add the stir-fried Harvestime All-in-one-Pot Mixed Vegetables and season with salt, pepper, and dried oregano.
  5. Finally, sprinkle Cheddar cheese on top.

Grill the pizza:

  1. Place the assembled pizza back on the grill and close the lid. Grill for an additional 5 – 7 minutes, or until the cheese is melted, and the crust is crisp and golden.
  2. Carefully remove the grilled pizza from the braai and let it cool for a minute.
