It’s got that perfect mix of comfort and indulgence – crispy, smoky bacon, juicy pork, buttery mashed potatoes, and a silky, flavour-packed sauce that brings everything together. And the best part? Ingredients
- 1 Pork loin
- 1 Pack streaky bacon
- Salt & pepper
- Cooked mash potato
- 6 Broccoli tender stems (blanched)
- 6 Baby carrots (blanched)
- 50g Butter
- 1/2 White onion
- 1 Minced garlic
- 200ml Chicken stock
- 100ml Cream
- Salt & pepper to taste
Method
- Pre-heat oven to 180°C
- Season pork loin with salt and pepper.
- Lay one piece of bacon down under one end of the pork. Secure it with a toothpick and wrap the bacon around the pork.
- Put the roast on a rack in a roasting pan.
- Roast for 20 – 25 min at 180°C and then allow to rest for 15 minutes.
- In a separate pan, fry your onion until soft and then add your garlic and butter, stir for 3 minutes and then add your stock. Allow this to reduce by half and then add your cream. Simmer for 5-7 minutes and then serve.
