Mussels cooked in beer with bacon and olives

Mussels are a great natural source of lean protein, packed with iron, omega-3s and essential vitamins like B12.

If you’ve never tried mussels with beer, bacon and olives, you’re in for something a bit special. The beer adds a light, savoury depth, the bacon brings smoky richness, and the olives cut through with just the right amount of saltiness. It’s a mix that shouldn’t work – but absolutely does! Ingredients

  • 1 lager style beer (some for sipping and some for your food)
  • 300g mussels
  • 1 medium red onion
  • 50ml olive oil
  • 5g crushed garlic
  • 3g thyme
  • 5g parsley, chopped
  • 50g bacon
  • 35g olives
  • Salt and pepper to taste
  • 1 lemon

Method

  1. To a large pan, add your olive oil and bring to a high heat.
  2. Once your pan is smoking, add in your bacon, onions and garlic and sauté for 3-4 minutes.
  3. Once your onions start to brown, add in your thyme and mussels and sauté for a further 2 minutes.
  4. At this point, you want to grab your beer and splash your pan with a generous amount forming the sauce for your dish.
  5. Season to your taste and if you are happy you can throw in your olives and toss your pan a few more times before serving.
  6. Once done, serve in a bowl with some bread rolls or cheesy puff pastry straws or even enjoy on its own with a spoon. Garnish with a lemon wedge and some fresh chopped parsley.
