Enjoy pure berry goodness with homemade coulis

Once cooked, the coulis is left to cool before being jarred and stored in the fridge, where it’ll keep for several days.

Sweet, tangy, and bursting with colour, blackberry coulis is the kind of finishing touch that can instantly lift a dish. Whether it’s poured over pancakes, swirled through yoghurt, or paired with something rich and chocolatey, this berry sauce never misses. Best of all? It’s surprisingly simple to make. Just three minutes in the Instant Pot and you’ve got a smooth, glossy coulis packed with flavour – no stirring, no stovetop fuss, and no hovering over a pot.

Ingredients

  • 1.5kg blackberries
  • 2 tbsp lemon juice
  • 3/4 cups sugar

Method

  1. Add all your ingredients to the Instant Pot and mix well.
  2.  Pressure Cook on High Pressure for 3 minutes. Once finished, allow a full Natural Pressure Release.
  3.  Allow coulie to cool, decant into jars and refrigerate.
