A classic avocado and prawn cocktail, also known as the famous Avocado Ritz, is a timeless and delicious starter. This modern presentation, compliments of The South African Avocado Growers’ Association, includes all the ageless elements for an elegant starter or light lunch.

Prep: 5 minutes | Cook: 10 minutes | Ready in: 15 minutes | Serves: 4

2 fresh baguettes
2 ripe avocados, peeled, stoned and halved
1 tub ready-made prawn cocktail
Handful of microgreens
Freshly ground black pepper

Method

Cut the baguettes into slices and toast lightly on a griddle pan or in the oven.
Slice the avocado halves into fans and arrange on plates.
Place prawn cocktail on top and garnish with microgreens and a grinding of black pepper.
