Say cheers with this lush lychee cocktail

Raise a toast to warmer days with a cocktail that has floral notes and a hint of tropical fruit thanks to lychee syrup and rosewater.

Lychees bring a subtle floral sweetness with a juicy, tropical finish that pairs beautifully with white spirits, such as vodka or gin. A splash of lime balances it all out, while a hint of rose water (optional) brings in an extra layer of floral notes.

 

Ingredients

  • 50ml vodka (or gin)
  • 25ml lychee syrup (from the tin)
  • 3 lychees (fresh or tinned)
  • 15ml freshly squeezed lime juice
  • 1–2 drops of rose water
  • Ice cubes
  • Optional: a dash of rose water
  • To garnish: mint leaves or an extra lychee on a cocktail stick

Method

  1. Muddle the lychees in a shaker until juicy.
  2. Add the vodka, lychee syrup, lime juice, rose water (if using) and a handful of ice.
  3. Shake well until chilled.
  4. Strain into a chilled martini or coupe glass.
  5. Garnish with a mint sprig or lychee on a stick.
