This cocktail can easily be made at home with any dry gin, so you don't need expensive brands for great flavour.
Every year, on the second Friday of October, the humble egg gets its moment in the spotlight with World Egg Day. While most people think of eggs at breakfast, they can also be used in cocktails. This classic gin sour recipe uses egg white to create a silky texture and a frothy top.
Ingredients
- 50ml dry gin
- 25ml freshly squeezed lemon juice
- 15ml sugar syrup (adjust to taste)
- 1 egg white
- Ice cubes
- Lemon peel or slice, to garnish
Method
- In a cocktail shaker, add the gin, lemon juice, sugar syrup, and egg white. Shake well without ice for about 15 seconds – this helps the egg white foam up.
- Add ice to the shaker and shake again until well chilled.
- Strain into a chilled coupe or martini glass.
- Garnish with a strip of lemon peel or a thin slice of lemon on the rim.
