Easy-to-make pesto ravioli recipe

Pumpkin ravioli with pesto is a simple yet delicious meal that works well for both busy weeknights and family dinners.

Pumpkin ravioli already tastes delicious, but add a good pesto and it’s even better. This version uses a ready-made ravioli, which means no time spent rolling dough or filling pasta. The ravioli is gently sautéed in butter and tossed through basil pesto so every piece is coated in herby, garlicky goodness. To finish, crunchy pecan nuts, fresh basil leaves, and a scattering of parmesan shavings are added. The dish looks like something you’d order at a restaurant, but in comes together in less than 20 minutes. Recipe compliments of Goldcrest.

Ingredients 

  • 1 pack Pumpkin ravioli (store bought) 
  • 1 tbsp butter  
  • ½ jar Goldcrest Basil pesto 
  • 2 tbsp Pecan nuts 
  • 2 tbsp Basil leaves 
  • Handful Parmesan shavings

Method 

  1. Cook the pasta in boiling water until al dente  
  2. Place the butter in a pan over a medium heat 
  3. Sautee the ravioli in the pan until just golden 
  4. Pour the Goldcrest Basil pesto into the pan and stir until the past is coated 
  5. Toss with the pecan nuts and parmesan shavings 
  6. Garnish with basil leaves to serve
