Lime mousse decorated with chocolate flakes

You can make this dessert in advance, chill it in the fridge, and finish it with a generous sprinkling of chocolate just before serving.

The texture of this lime mousse is what makes it irresistible. It’s airy and smooth, with that melt-in-your-mouth quality that only a good mousse can deliver. Served in small white cups, it looks like it came straight from a café, even though it’s made with just a handful of simple ingredients you probably already have at home.

Ingredients

  • 1 cup double cream
  • 1/3 cup condensed milk
  • Juice and zest of 1 lime
  • A few drops of green food colouring (optional)
  • 50g milk chocolate, roughly grated or flaked

Method

  1. Whip the cream until soft peaks form.
  2. Fold in the condensed milk, lime juice, and zest. Add a little green food colouring if you like a soft pastel hue.
  3. Spoon into small cups or ramekins and chill for at least two hours, or until set.
  4. Top with plenty of chocolate flakes before serving.
