Today is International Waffle Day!

International Waffle Day is the perfect excuse to pull out the waffle iron and make a batch of yummy vanilla waffles.

Crisp on the outside, soft in the middle, and endlessly adaptable, waffles work just as well for breakfast as they do for a late brunch or an easy dessert. This version is ridiculously easy to make. A basic vanilla batter that cooks up golden and light, ready to be topped however you like. Kids usually go for syrup or chocolate spread, while adults might prefer fresh fruit, yoghurt or a dusting of icing sugar.

Ingredients

  • 2 cups cake flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • Pinch of salt
  • 2 large eggs
  • 1¾ cups milk
  • 80 g butter, melted and cooled slightly
  • 1 tsp vanilla extract

Method

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, sugar and salt.
  3. In a separate bowl, whisk the eggs, milk, melted butter and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Lightly grease the waffle iron if needed, then spoon in the batter.
  6. Cook until the waffles are golden and crisp on the outside.
  7. Serve straight away with your choice of toppings.
