Wholewheat, cheesy chicken thigh wraps

These wholewheat chicken wraps layer juicy chicken, creamy cottage cheese spread and crisp vegetables into a wholesome meal.

Wholewheat wraps are an easy weeknight meal option. They are quick to put together, easy to customise and filling without feeling heavy. Here, juicy chicken, creamy cottage cheese spread and fresh crunchy vegetables come together for a wrap that works just as well for lunchboxes as it does for a simple family dinner. Ingredients

Cottage cheese spread:

  • 200 g cottage cheese
  • 5 g fresh chives, finely chopped
  • 5 g fresh parsley, finely chopped
  • 5 ml hot English mustard
  • Salt and freshly ground black pepper

To assemble:

  • 700 g boneless chicken thighs
  • Olive oil, for frying
  • 4 whole wheat wraps
  • 40 g baby spinach leaves
  • 250 ml grated mozzarella cheese
  • 1 red or yellow pepper, thinly sliced
  • 40 g bean sprouts

Method

  1. Place the cottage cheese in a bowl. Add the chives, parsley and mustard. Mix well and season to taste. Chill until needed.
  2. Cut the chicken into bite-sized pieces and season. Heat olive oil in a pan and fry until cooked through and golden.
  3. Warm the wraps according to pack instructions.
  4. Spread the cottage cheese mixture over each wrap. Layer with spinach, mozzarella, chicken, peppers and sprouts.
  5. Roll up tightly and serve immediately.
