Winter warmer: Curried samp with tender lamb and fresh mint
Spiced curried samp and lamb is rich, warm, and full of flavour, making it the perfect dinner choice for a cold winter evening.
Samp has been a staple in Southern African kitchens for generations. It is simple, filling, and made to feed a crowd. Traditionally, it could take hours to cook until soft, often simmering slowly on the stove. These days, a pressure cooker does the hard work in a fraction of the time, without losing that delicious flavour. Recipe compliments of Instant Pot.

Ingredients
- 2 cups boiled samp
- 800 g lamb pieces
- Ginger garlic paste
- Onion
- Kashmiri masala
- Turmeric
- Cumin
- Tomatoes
- Whole spices
- Water
- Fresh coriander and mint
Method
- Sauté whole spices and onion.
- Add paste and tomatoes.
- Stir in spices and lamb.
- Pressure Cook 20 minutes.
- Natural release.
- Stir in samp and finish with herbs.
