Plum crumble with a golden, buttery topping

Apples may be the familiar star of baked crumbles, but plums are just as delicious and bring their own jammy twist to this classic dessert.

Apple crumble might be a classic dessert, but swapping the apples for plums gives this crumble a jammy texture and a slightly caramelised finish. As they bake, the plums soften and collapse into their own juices, turning sweet, gently tart and beautifully syrupy.

Serves: 4 to 6 | Prep time: 15 minutes | Cook time: 30 to 35 minutes

Ingredients

For the filling:

  • 600 g ripe plums, halved and stoned
  • 60 g brown sugar
  • 1 tbsp cornflour
  • 1 tsp vanilla extract
  • Zest of ½ lemon

For the crumble topping:

  • 120 g cake flour
  • 80 g cold butter, cubed
  • 80 g caster sugar
  • Pinch of salt

Method

  1. Preheat the oven to 180°C.
  2. Toss plums with sugar, cornflour, vanilla and lemon zest. Spoon into a baking dish.
  3. Rub butter into flour and salt until crumbly. Stir in sugar.
  4. Scatter generously over the fruit.
  5. Bake until golden and bubbling at the edges. Rest briefly before serving.
