Amasi and cookies ice cream with condensed milk

Creamy, tangy and packed with chocolate cookies, this no-churn amasi ice cream is an easy dessert to make ahead.

You don’t need an ice cream machine to make the perfect scoop. This ice cream recipe, compliments of Rediscoverdairy, uses amasi, condensed milk and cream to create a rich, creamy dessert, with crushed chocolate sandwich cookies folded through for a little crunch. Amasi also gives the ice cream a gentle tang, which helps balance the sweetness of the condensed milk and biscuits.

Prep time: 10 minutes | Setting time: 3–4 hours | Serves: 8–10

Ingredients

  • 500 ml cream
  • 500 ml amasi
  • 250 ml condensed milk
  • 5 ml vanilla essence
  • 250 ml sandwich chocolate cookies, crushed

Method

  1. Line a loaf tin with clingfilm and place it in the freezer to chill.
  2. In a bowl, whisk together the condensed milk and vanilla essence.
  3. Using an electric mixer, beat the cream until soft peaks form.
  4. Add the condensed milk mixture and amasi to the whipped cream and continue mixing until well combined.
  5. Remove the bowl from the mixer and gently fold in the crushed chocolate cookies.
  6. Pour the mixture into the chilled loaf tin and place in the freezer for 3–4 hours, or until set.
  7. Once frozen, turn out the ice cream, slice and serve.
