Here are some inspirational ideas for your enjoyment this #FoodPornFriday:
Bhajias – chilli bites
-Ingredients
1 and a ½ cups chickpea flour (available from specialist stores)
½ cup self raising flour
1 teaspoon each of baking powder, coriander powder and cumin powder
½ teaspoon turmeric powder
2 teaspoons red chilli flakes (or to taste)
1 large potato, roughly grated
1 large onion, roughly grated
2 handfuls shredded dhania (coriander)
1 teaspoon salt
Oil for frying
-Method
Sift all the dry ingredients into a large mixing bowl. To this, add the remaining ingredients with enough water to make a thick batter.
Heat the oil in a large frying pan and add the bhajia mixture one teaspoonful at a time. The bhajia are ready when they are golden brown on all sides. Drain on absorbent paper and serve with a good dipping sauce.

Mini steak wraps
-Ingredients
For the wraps:
¼ cup cake flour, plus extra for dusting
1 teaspoon butter
A few tablespoons water
For the steak:
1 good quality steak
1 lemon, juiced
3 tablespoons olive oil
1 teaspoon chopped fresh herbs (thyme works well with beef)
-Method
Rub the butter into the flour until it resembles breadcrumbs. Adding a little water at a time, knead to form a shapable dough. Roll the dough into a sausage and divided it into 10 balls. Roll these balls out thinly on a floured board.
Dry fry the dough in a pan over medium heat -bubbles are normal. The wraps are ready when they have lightly browned and are less doughy. Keep covered until use.
For the dressing, combine the lemon juice, olive oil and herbs. Then cook the steak. Braaing or grilling is recommended – once the steak is cooked, slice it into strips and toss in the dressing. It is recommended to allow the steak to rest in the marinade for a while.
The joy of these wraps is creating your own. Serve wraps, steak and some accompaniments on a platter or board and let everyone make theirs.
