CHERRY ICE CREAM:
*400ml chilled FIRST CHOICE Strawberry Velvet
*100g crushed cherries, pitted
*50g pitted cherries, halved
CHOCOLATE ICE CREAM:
*400ml chilled FIRST CHOICE Chocolate Velvet
*30ml cacao powder
*150g pitted cherries, halved or chopped roughly
CRUST:
*150g chocolate cookies, crushed
*50g FIRST CHOICE Butter, melted
TO DECORATE:
*Chocolate shards
*Fresh cherries
DIRECTIONS:
- Line a loaf pan very well with clingwrap or baking paper.
- Whip the strawberry velvet until thick and fold in the cherries. Spoon into the prepared loaf tin and freeze for 1 hour.
- Whip the chocolate velvet and cacao powder until thick and fold in the cherries. Spoon on top of the cherry ice-cream layer and freeze for until firm.
- Combine the crushed biscuits and melted butter and spoon on top of the frozen chocolate ice cream layer. Press down gently to make sure the crumbs will make a firm base.
- Freeze overnight.
- Unmould the ice-cream cake onto a serving platter.
- Garnish with lots of fresh cherries and chocolate shards.
