#WFD- Honey Satay Chicken Stir Fry

Serve over cooked rice or noodles and sprinkle with spring onions

POLOKWANE – Satay is an Indonesian/Malaysian dish of seasoned, skewered and/or grilled meat, served with a sauce.

Turmeric is a necessary ingredient used to marinate satay, which gives the dish its characteristic yellow color. Meat commonly used includes beef, lamb, mutton, pork, fish, shrimp and chicken.

Satay may be served with a spicy peanut sauce dip, or peanut gravy

Ingredients

  1. 15ml sunflower oil
  2. 500g skinless chicken breast, sliced
  3. 1 x onion, sliced
  4. 1 x KNORR Chicken Stock Pot
  5. 45ml honey
  6. 30ml dijon mustard
  7. 400ml water
  8. 45ml peanut butter
  9. 15ml reduced salt soy sauce
  10. 1 x cup green beans, sliced
  11. 1 x red pepper, sliced
  12. 0.5 x cup spring onions, sliced
  13. 500ml rice, uncooked

Method

  1. Boil rice until tender then drain and set aside
  2. Heat sunflower oil in a large pan and brown chicken
  3. Add onion, KNORR Chicken Stock Pot, Honey, Dijon Mustard, water, peanut butter and soy, cover and simmer for 10 minutes
  4. Add beans and red pepper. Cover and allow to simmer for another 5 minutes
