#WFD- Spicy Mexican Mince and Bean Casserole

This dish is guaranteed to create a fiesta in your mouth.

POLOKWANE – Besides being delicious, mexican dishes are also simple and easy to make.

This dish is similar to nachos but without the guacamole and cream cheese.

Ingredients

  1. 15ml oil
  2. 500g beef mince
  3. 400g tin tomatoes, whole
  4. 1 tin red kidney beans
  5. 10 black olives, pitted
  6. 1 x KNORR Beef Stock Pot
  7. 50ml periperi sauce
  8. 1 packet tortilla style chips
  9. 375ml cheddar cheese

Method

  1. Preheat oven on grill.
  2. Heat oil in a pan and brown the beef mince.
  3. Stir in peri-peri Sauce, beans, tomatoes and KNORR Beef Stock Pot.
  4. Simmer for 15 minutes and pour into a casserole dish, and sprinkle with olives.
  5. Arrange the chips around the edge of the casserole dish and sprinkle cheese on top.
  6. Place under the grill until the cheese is melted.
