Charles Finlay, store manager of Food Lover’s Market Westgate, has given us tips on the best ways to select and store sweet potatoes.

When buying sweet potatoes, select the small to medium ones as they usually are sweet and creamy. Select the ones that are firm, smooth-skinned and even-toned. Sweet potatoes should be kept at room temperature and only be refrigerated once they have been cooked. Storing fresh sweet potatoes in the refrigerator before cooking will harden the core of the vegetable and create spots, causing the vegetable to spoil much quicker.

Sweet potato could be kept for up to two weeks if stored properly.
