WATCH: Giant Benoekie is ready for assembly

Get your hands on portions of the giant Benoekie at Grasslands Driving Range on February 17.

It is said that you have to crack some eggs to make an omelette, but you need to crack more than 80 to bake a giant Benoekie.

Wearing sensible shoes and sporting her Rain Baking apron, Westdene’s Yolandi Palmer has been given the run of George’s Bread & Co’s kitchen at the K90 Centre to bake her creation.

With help from head baker Albertus Kleynhans, the local baker made light work of her ambitious endeavour to bake the city’s biggest sugar cookie.

Yolandi Palmer, the creator of the giant Benoekie, was in awe of the industrial-sized baking equipment at her disposal in the George’s Bread & Co kitchen.

Carefully weighing and measuring, Yolandi kicked her preparations into high speed on February 14 and 15, just two days before this delight will go on sale.

“I feel like a little kid playing in a huge playground,” she said moments before wheeling her creation into the industrial oven.

“My dream is fast becoming a reality, and none of this would have been possible without the help and support of the Benoni community, The Humanity Foundation, and local businesses that assisted in sponsoring the large quantities of ingredients.”

As the smell of vanilla fills the air, signalling the marvellous creation is almost done, Yolandi pours over her notebook, quickly calculating the ingredient quantities used.

With her creation containing 6kg of icing sugar, 20.5kg of flour and 12kg butter, she says that once assembled, the cookie will measure 2.7m by 1.5m.

“We still have to weigh the actual cookie, but the royal icing is already standing at 50kg,” she said, laughing.

Yolandi carefully adds icing sugar to the mixer to make 50kg of royal icing.

“This is truly a giant cookie.”

Portions of the giant Benoekie will go on sale at Grasslands Driving Range from 09:00 on Saturday (February 17), and the proceeds will be donated to Huis Thandi, Huis Charis Youth Centre and Clean Projects.
