This hearty chickpea veg bowl uses veggies, chickpeas, paprika, and oregano for a warm, crisp air-fried meal that fits any busy weeknight.

When you want a fast veggie bowl that still tastes like real food, this one delivers. Tip in the frozen veg, add your smoky spice mix, then let the air fryer do the work while you get on with your evening. The chickpeas go lightly crisp on the outside and stay soft in the middle, so the bowl feels hearty, not like a side salad. Eat it straight from the bowl, or serve it with grilled chicken or fish. Ingredients

• 1 packet McCain Rustic Veg
• 2 tsp paprika
• 1 tsp origanum
• Olive oil, a drizzle
• 1 can chickpeas, drained and rinsed
• Salt and pepper, to taste

Method

  1. Tip the frozen veg into a bowl.
  2. Add the olive oil, origanum, paprika, salt, and pepper.
  3. Toss until everything looks evenly coated.
  4. Air fry for 10 minutes at 180°C.
  5. Add the chickpeas and toss well.
  6. Air fry for 10 minutes more, until the veggies are golden and the chickpeas feel crisp.
