Celebrate World Ice Cream Day with this winter-friendly dessert

This easy-to-make fried delight is proof that even in the chilliest season, ice cream has a place at the table.

As luck would have it, World Ice Cream Day falls smack in the middle of winter. The good news is fried ice cream is a contradiction that makes perfect sense. The crunchy, warm coating provides just enough heat to make it comforting, while the ice cream core keeps it light and refreshing.

 

Ingredients

  • 4 scoops of vanilla ice cream
  • 1 cup crushed cornflakes or digestive biscuits
  • 1 tsp cinnamon (optional)
  • 1 egg
  • 1 tbsp milk
  • Oil for frying
  • Whipped cream, chocolate sauce, and chocolate chips (for garnish)

Method

  1. Scoop the ice cream into firm balls and place them on a tray. Freeze for at least 2 hours or until rock solid.
  2. Mix crushed cornflakes or biscuits with cinnamon (if using).
  3. Beat the egg and milk together in a small bowl.
  4. Roll the frozen ice cream balls in the crumb mixture, dip in the egg wash, then roll again in the crumbs for a thick coating. Freeze for another hour.
  5. Heat oil in a deep fryer or pan to 190°C (375°F).
  6. Fry each ball for 10–15 seconds until golden brown. Remove with a slotted spoon and drain quickly on paper towel.
  7. Serve immediately with whipped cream, chocolate drizzle, and chocolate chips.
